Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1/2 cup plain yogurt
  • 1/4 cup milk
