Instructions: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes. Add the vegetable broth, white beans, tomatoes, and baby spinach. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.
