Creamed Spinach Soup - the ultimate comfort food!

This delicious soup is perfect for a cold winter day. It's easy to make and it's loaded with flavor.

Ingredients:

1 lb. fresh spinach, washed and chopped 2 tablespoons olive oil 1 small onion, chopped 3 cloves garlic, minced 4 cups chicken or vegetable stock 1 can (15 oz) chickpeas, drained and rinsed 1/2 teaspoon ground cumin 1/2 teaspoon smoked paprika Salt and pepper, to taste For the cream sauce: 1 cup heavy cream 2 tablespoons sour cream 1 garlic clove, minced Salt and pepper, to taste Optional toppings: Shredded cheese Sour cream Diced avocado Chopped green onions Directions:

 Put the spinach, olive oil, onion, and garlic in a large stockpot. Cook over medium heat until the spinach is wilted. Add the stock, chickpeas, cumin, smoked paprika, salt and pepper. Bring to a boil then reduce heat to low and simmer for 30 minutes.     Meanwhile, make the cream sauce by whisking together the heavy cream, sour cream and garlic until combined. Season with salt and pepper to taste.     To serve, ladle the soup into bowls and top with shredded cheese, sour cream, diced avocado and chopped green onions if desired.

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the stock and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  3. Add the spinach and cook until wilted, about 2 minutes. Stir in the crème fraiche or heavy cream and season with salt and pepper to taste. Serve hot.

-2 tablespoons olive oil -1 large onion, diced -3 cloves garlic, minced -4 cups chicken broth -1/2 teaspoon ground black pepper -1/4 teaspoon salt -1/2 pound fresh spinach, chopped -1/4 cup grated Parmesan cheese Instructions:

  1. Heat the oil in a large saucepan over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
  2. Add the chicken broth, pepper, salt and spinach. Bring to a simmer and cook until the spinach is wilted, about 5 minutes.
  3. Remove from heat and stir in the Parmesan cheese. Serve hot.

CREAMY SPAGHETTI SQUASH SOUP WITH CREAMED SPINACH

Ingredients:

-1 spaghetti squash, roasted and cubed

-1 tbsp. olive oil

-4 cups chicken or vegetable stock

-1/2 onion, chopped

-2 cloves garlic, minced

-1/4 tsp. nutmeg

-Salt and pepper, to taste

Creamed spinach:

-1 10 oz. package frozen spinach, thawed and drained well I ngredients for the creamy sauce: -1/4 cup butter -1/4 cup flour -2 cups milk or half and half*

*For a richer soup, use half and half. If you want to keep this dairy free, use unsweetened almond milk or coconut milk.

Instructions: 1) Preheat oven to 375 degrees F (190 degrees C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside of the squash with olive oil and place cut side down on a baking sheet. Bake for 30 minutes, or until the flesh is soft when poked with a fork. 2) In a large pot over medium heat, cook the onions in olive oil until translucent. Add garlic and nutmeg; cook for one minute longer. 3) Add the roasted spaghetti squash cubes, chicken stock, salt and pepper to taste. Bring to a boil then reduce heat to low and simmer for 10 minutes. 4) To make the creamy sauce, melt butter in a saucepan over medium heat. Stir in flour until smooth. Gradually stir in milk or half and half* until mixture thickens and comes to a boil. 5) Pour creamy sauce into the soup pot and stir until well combined. Serve soup warm with creamed spinach on top. Enjoy!
