1 tablespoon olive oil 1 onion, chopped 3 cloves garlic, minced 2 bunches spinach, washed and tough stems removed 3 cups vegetable broth 1 cup milk Salt and pepper, to taste ¼ cup Parmesan cheese, freshly grated Croutons or bread for dipping (optional) Instructions: 1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. 2. Add the spinach and cook until wilted, about 3 minutes. 3. Add the broth and milk and bring to a simmer. Season with salt and pepper, to taste. 4. Serve with Parmesan cheese and croutons or bread for dipping. Enjoy!

Ingredients: -1 lb. ground beef -1 onion, chopped -3 cloves garlic, minced -1 (14.5 oz) can diced tomatoes, undrained -1 (8 oz) can tomato sauce -3 cups beef broth -2 tsp. dried oregano -1 tsp. dried basil -1/2 tsp. salt -1/4 tsp. black pepper -15 oz. can kidney beans, rinsed and drained -15 oz. can of black beans, rinsed and drained -15 oz. can of garbanzo beans, rinsed and drained -15 oz. can of chickpeas, rinsed and drained Directions:

1) In a large pot over medium heat, cook the ground beef until browned. Drain any excess fat and remove from heat.  2) Add the onion, garlic, diced tomatoes with juice, tomato sauce, beef broth, oregano, basil, salt, pepper and ground beef to the pot and stir together well.  3) Stir in the kidney beans, black beans, garbanzo beans and chickpeas and bring to a boil over high heat. Reduce the heat to low and simmer for 30 minutes stirring occasionally.  

Serve hot with some shredded cheese and sour cream on top!
